ARBOIS SAVAGNIN OUILLÉ 100% Savagnin. The vines have an average age of 30 years, sourced from multiple plots in the village of Montigny-les-Arsures, where the winery is located. The diverse soils feature iridescent Triassic clay, grey marl capped with Middle Jurassic limestone, and Early Jurassic marl. To preserve the characteristic aromas of the Savagnin grape, one-third of the harvest undergoes overnight skin contact before fermentation in 350-liter and 500-liter oak casks, as well as large wooden vats ranging from 2,000 to 6,000 liters. Aging takes place with half of the blend in 500-liter oak barrels (2% new) and the remainder in large vats and stainless steel tanks. "Ouillé" derives from the verb "ouiller," meaning to top up. While Savagnin in the Jura region is predominantly aged under a flor (veil of yeast) with oxidative qualities, this domaine tops up the barrels every two weeks with wine of the same variety and vintage to maintain the fresh character and aromatics of the grape. It offers magnificent aromas of citrus and tropical fruits, complemented by a lively acidity, supple fruit profile, and a crisp, linear palate. Document provided by Finesse Co., Ltd.
