CHINON ROUGE PIERRE DE TUF 100% Cabernet Franc. Crafted from grapes grown in the domaine's oldest clay soil parcel, planted in 1943, alongside a clay-silex parcel where the vines are trellised high to ensure optimal airflow. Unlike the other cuvées, vinification takes place in 15th-century limestone tanks, followed by 17 to 21 months of aging in 500-liter oak barrels (one-third new, one-third one-year-old, and one-third two-year-old). Because limestone tanks warm up slowly, the maceration period is extended; combined with meticulous punch-downs and pump-overs, this gently extracts rich aromatics. The result is a wine with a rich, concentrated depth of flavor, intricate complexity, and a lingering finish that speaks to its remarkable aging potential. 株式会社フィネス資料
