100% Sauvignon Blanc. The standard Pouilly-Fumé is vinified parcel by parcel and then blended, but this cuvée is a single bottling of whichever parcel produced the finest fruit that year. The name refers to the miracle of making a fine wine through nature’s grace despite the very unsettled weather of the 2023 vintage. The 2023 is bottled solely from “Parcelles des Sapins” (the fir trees), a sloping limestone parcel, and undergoes skin maceration, which the standard cuvée does not. Aromas of seaweed; a lively attack with fleshy, structured fruit, salinity and a faint bitterness — richer and more complex than the standard Pouilly-Fumé, and a wine of real substance.
