The estate's origins trace back to the post-WWII year of 1947, when Lucien Chevigny planted vines in the "Aux Champs Perdrix" climat in Vosne-Romanée. The current owner and third-generation vigneron, Pascal Chevigny, took over the reins from his father, Michel, in 1984. The domain's name is a combination of Pascal's paternal surname, Chevigny, and his maternal surname, Rousseau. Today, they manage approximately 4 hectares of vineyards, primarily concentrated in the Côte de Nuits. Practicing sustainable viticulture under Lutte Raisonnée, the estate also holds HVE (High Environmental Value) certification—an accreditation awarded to producers who demonstrate rigorous, environmentally conscious practices spanning from viticulture to bottling—with the ultimate goal of crafting wines of uncompromising quality. Regarding sales, the domain strives to release each vintage only after it has achieved sufficient bottle aging and reached a stage where it is truly ready to be enjoyed. Harvesting is done entirely by hand with 100% destemming. Alcoholic fermentation is conducted using native yeasts at temperatures up to 30°C for 10 to 15 days, accompanied by pigeage (punching down) and remuage/remontage (pump-overs). Aging takes place in oak barrels for around 12 months for the Bourgogne tier and approximately 18 months for the rest. The proportion of new oak varies by vintage, averaging about 25% for Bourgogne, roughly 80% for other cuvées, and occasionally reaching 100% exclusively for Grands Echézeaux. The wines undergo only a light fining prior to being bottled unfiltered.
