FIXIN 100% Pinot Noir. Sourced from the "Les Foussottes" parcel situated in the northern part of the village of Fixin. The vines, approximately 35 years of age, are planted on a 0.35-hectare clay-limestone plot. Alcoholic fermentation lasts 10 to 15 days at temperatures up to 30°C, accompanied by regular pigeage (punching down) and remontage (pump-overs). Aging is carried out in oak barrels—with 30% new oak—for 12 to 18 months. It displays a luminous garnet hue and enticing aromas of griotte cherries, fresh cherries, and violets, gradually developing nuances of forest floor and spices with age. In its youth, it offers a powerful, mouth-filling fruitiness, a harmonious balance of structure and delicacy, and firm yet supple tannins. Document provided by Finesse Co., Ltd.
