PINOTS MACÉRÉ, AMBRE ROUGE (AC ALSACE) This unique cuvée is crafted by blending destemmed Pinot Noir with Pinot Gris, followed by skin maceration in the style of a red wine. Pinot Noir makes up approximately 15% of the blend. While the grapes are primarily sourced from AOC Alsace vineyards, a small portion of the Pinot Gris comes from the Grand Cru Sonnenglanz. The wine is slowly vinified in egg-shaped concrete vats, utilizing pump-overs rather than punch-downs. True to its name, 'Ambre' (meaning amber), the wine displays a beautiful reddish-amber hue. It reveals aromas of red fruit confit alongside floral notes of peony and violet. On the palate, it is soft and supple, with a refreshing acidity that ensures a beautifully balanced finish.
