At harvest, grapes from the same parcel as the Aligoté mentioned above are divided into two portions: one for the regular bottling and one for this macerated version, which is vinified like a red wine. Compared to the standard Aligoté, it exhibits richer aromas, concentrated fruit and acidity, along with tannins derived from the skins and seeds, resulting in a sophisticated style tailored for connoisseurs.
