BOURGOGNE TONNERRE AVITA 100% Chardonnay. A special cuvée crafted from a meticulous selection of grapes within the standard Bourgogne Tonnerre parcels, vinified in large 500-liter earthenware jars called "Grès." Fired at 1250°C, these vessels feature finer pores than the aforementioned "Terre Cuite," allowing for delicate oxygen exchange and a softer palate. Stainless steel tanks are avoided as their airtight nature tends to induce reduction, and oak barrels are omitted to prevent oak flavoring. It unfurls with white floral aromas, a delicate yet rich and generous palate of fruit, and a refreshing saline minerality, resulting in a rounded and relaxed expression. Both the red and white AVITA are first-vintage releases in 2022, with approximately 1,000 bottles produced of each. Source: Importer - FINESSE INC.
