CHABLIS 1ER CRU VAU DE VEY 100% Chardonnay. Following harvest and pressing, the must undergoes cold settling in stainless steel tanks for 24 hours. Fermentation takes place for 10 days using a 50/50 split of earthenware jars and seasoned oak barrels, followed by 12 months of aging in the same vessels. The porous nature of the earthenware tanks increases oxygen contact, enhancing aromatic complexity without imparting oak aromas. The components are then blended in stainless steel tanks and aged for an additional 6 months prior to bottling. It reveals aromas of honeysuckle and almonds, a pleasant palate underpinned by minerality, and a rich, exceptionally long finish. Importer: Finesse Co., Ltd.
